Thank you, Alexander! This is super helpful. Sometimes I feel like I'm following instructions without knowing exactly why I'm doing something so it's so great to get a better understanding! I do a recipe very similar to the one you shared, but it ferments a bit longer and only has two folds. I'll give yours a shot and check out the difference.
