Hi Annabelle,

Thanks for your response. Doesn't really say in the recipe I got. Just says to mix the ingredients and then bulk ferment for 3-3.5 hours with 3 stretch and folds in between. Doesn't say if I should knead it before the bulk ferment. It is ok I will give it a go with your method.

Also another question, I notice my rye starter or wheat starter is bubbling but there are no bubbles on the surface. Is that normal? No matter how many times I feed it (twice a day at least) it will grow and bubble but there will never be bubbles on the surface but I can see plenty of bubbles from the side of my jar. Is it still ok to go ahead and make a leaven?
