Hi! I want to make bread but I have heard so many different options! Do you think it will work to knead my dough in the mixer for 15 min then shape and let proof for 12 hrs (it is a sourdough bread) and then bake? Skipping the bulk fermentation and doing a long proofing instead? Thanks for answering!
