Hi, I have a question about the bulk fermentation. Can I do the bulk fermentation overnight in the refrigerator and then next day shape the bread and leave it to rise and then bake it? I live in Mumbai India and it is extremely hot and humid so the fear of it over proofing and getting to sour is my fear. Thanks.
