Hello. These are great instructions! Question, I use a Dutch oven prepared with parchment and some corn meal between the bowl and the paper. This prevents over-browning on the bottom of the loaf. But my bread often cracks around the bottom. I've tried taking it out of the pot to finish on the oven rack, but sometimes too late. Am I under-proofing the first rise? My second rise seems fine - not sure if I am tightening the loaf shape enough or making a big enough slash - which I can't really do if I'm putting a filling into the bread. Help? Thanks!
