Hi Angela! This is something a lot of people like to do, I don't believe it's in any of our recipes and we don't teach it at our baking school. We haven't found that it does anything particularly amazing that makes it worth the extra effort and the pieces are so tiny that you don't get the flaky layers created by larger leaves of butter, so it's totally a personal preference thing!
