Sure thing, Amy. First, you'll need to use (or create, then use) a 100% gluten-free sourdough starter. Then all you have to do for this or any other non-yeasted recipe calling for regular all-purpose flour is to swap out the flour for our Gluten-Free Measure for Measure Flour. Happy GF baking!
