Hi Patricia, sugar does play a part in the moistness and texture of a quick bread like this, so I would suggest trying a little less sugar rather than eliminating it completely. I would try adding half as much sugar and see how that works for you. We also have this Skillet Cornbread recipe, that doesn't call for any sugar.
