I truly appreciate this post, PJ. I really love cornbread and I feel it often gets overlooked. Tweaks and twists may take a little extra time but, goodness knows, the making of basic cornbread can't be much simpler. I like the idea of the toaster cakes. At this time, I have neither a toaster nor a functional toaster oven but I would think a couple minutes in a skillet would also serve.
