Hi Vicki! The professional line and their retail counterparts are the same exact products. Sir Lancelot and High Gluten Flour are the same. Bread Flour and Special Patent flour are the same. The only difference between the products is that the professional line enriches the flour with vitamins and nutrients like folic acid, niacin, thiamine and riboflavin whereas the retail products are unenriched.
