Hi Kathleen, we do sell a wide range of gluten-free products, including mixes and flours. We're bakers and not doctors or nutritionists, so we aren't able to offer advise on whether soft wheat from Germany would work in a gluten-free diet, but it's our understanding that any type of wheat flour would be unsuitable for Celiacs to consume.
