Thanks so much for sharing your love for our flours, Cletus! Are you using our all-purpose flour and bread flour in the same recipe? There shouldn't be a difference in the smell of the flour and if you're making the same recipe, there shouldn't be a difference in the aroma of your bread. If you're doing a long, cold ferment and/or using sourdough starter when baking with bread flour, this could account for the difference in the smell of the bread.
