Hi there, Mimi! Special Patent is what we call our bread flour in our professional line. It has a 12.7% protein content whereas Sir Galahad (all-purpose flour) has an 11.7% protein content and Sir Lancelot (high-gluten flour) has 14% protein content. We hope this helps and happy baking!
