"Lancelot" is KAB's highest-gluten flour. I use it for amazing bread, pizza crust, and such things. I believe the cake flour used to be "Guenevere". Lancelot is here, though sadly they have removed the "Lancelot" name: https://shop.kingarthurbaking.com/items/high-gluten-flour-3-lb
