I have been unable to find bread flour (12.5% protein) anywhere, but I do have King Arthur organic all purpose flour (11.7% protein) and King Arthur white whole wheat flour (13% protein). What ratio of each should I use to achieve a flour of 12.5% protein? Thanks.
