When shopping today at an Amish store, I was only able to find a flour labeled as "pie and pastry flour" and no AP flour. Is it the same thing? Can I use this like I would use AP flour? (They did have a few other flours that were labeled as whole wheat flour, bread flour and high-gluten flour. Thanks for your help.
