Hi Ellen! Since English flour tends to be quite low protein, King Arthur Flour Unbleached All-Purpose Flour would probably do the trick! If you find after your first attempt that the dough was a little more slack than you'd like, you can try mixing it with our Bread Flour for additional strength. Hope that helps, and happy baking!
