Hi Sue, your puff pastry will likely be a bit denser when using fresh milled soft white wheat flour and you may find you need to tweak the flour/butter amounts slightly to adjust for the different absorption of your whole wheat flour. For best results I would suggest using half soft white wheat and half AP flour.
