I love the flakiness of this crust, but I find it very elastic. It's hard to roll out because it wants to pull back to its prior thickness, and it shrinks dramatically when baked. I pile pie weights high up the sides, to little avail. I've tried chilling it before rolling out and freezing it before baking, to no avail. Any suggestions?
