You sure can use a quick puff pastry for a pie crust that will be blind baked, Sierra! Because puff pastry really puffs up, we'd recommend using sugar to fill your crust for blind baking so you can push it up against the sides of the crust to prevent them from getting too puffy. Happy baking!
