Ann, if you're relying on the oven to tell you when it's preheated, don't; ovens are notorious for beeping to tell you they're up to temperature, and they're not even close. Get yourself a stand-alone oven thermometer and leave it in the oven; that way, you can tell when the oven is truly preheated, as well as see whether your oven might be running a little cold. You can definitely bake your pie on a lower rack; this will help its bottom crust brown. But as for the custard cooking through, that should happen anywhere in the oven; so do get yourself a thermometer and use it (if you're not already). Good luck — PJH@KAF
