Laurie, you're right; puff pastry (pâte feuilletée) doesn't include yeast. There's another type of laminated dough, familiarly known as puff dough (rather than puff pastry) that includes yeast, and is used for pastries such as Danish and French croissant. I got lost in the forest of terminology! Thanks for helping me find my way out — I'll clarify the post. PJH@KAF
