The problems I have with the toothpick technique: 1) it doesn’t tell you if the cake is OVER-baked and too dry inside
2) even when the cake is done, some crumbs do stick to the toothpick and it’s unclear what that means in terms of wether it’s done or needs more time... which leads to the next problem
3) since cakes continue baking after taking them out of the oven, you end up with an overly dry cake if you wait until the toothpick comes out completely clean before pulling out the cake
