I love these--and today I did not even leave the overnight sponge overnight. It was puffy after a couple hours, so I used it, with olive oil. I dabbed some leftover pesto on top of the batter in the waffle iron and my savory sourdough waffles are delicious. I've used chives, cheese, and other savory ingredients too, for other savory waffles. Could leave out some of the sugar, for sure.
