I remembered the article on this as I was preparing my sponge this morning, so I set aside the discard and turned it into these amazing waffles in no time at all. Thank you for the recipe. I will say I keep my SD starter thick, not watery, so I skipped the overnight phase and went right to the recipe. Next time I will try the sponge and see the taste difference. Thank you.
