Hi Kelly, thanks for reaching out! We think you're right that mold seems unlikely, especially since your beans were very fresh! Sugar crystals seem like a much more likely culprit. If they become quite large, you might want to take a photo and email our Baker's Hotline team, but if they stay small, they're likely nothing to worry about.
