Thanks for this post, it has lots of helpful information! And here's a shout out to Anne Mientka for her lovely photographs. I would be interested in learning how to make my own brown sugar and baking powder, particularly if you provided the reasons why we bakers would prefer those to store-bought versions. I appreciated that you explained why we might want to make our own vanilla extract.
