You can experiment with the amount of time. This extended second rise should help you achieve the crust texture you want. It is also very important that you use the right amount of flour. Too much flour will give you a drier, more dense crust. Use a scale to weigh your ingredients or use the fluff, sprinkle and sweep technique.
