As a strawberry grower I'm sure she meant to wash the strawberries (drain and then spread out on paper towels to air dry) right before preparing. And I'll add a second piece of advise: never refrigerate strawberries if you want the best tasting berries. Buy (local if possible) or pick them the day you'll be serving the shortcake. Unfortunately if you buy from the grocery, they will already have been refrigerated. P.S. Peach shortcake is delicious, too.
