Elaine, if you want to avoid scratches it's best to use one of those heavy plastic lettuce knives, or similar. I confess I do use a metal knife oftentimes, and the finish will indeed become marked; but it doesn't ruin it, it just gives it the "patina of age." :) PJH@KAF
