Ghee, or clarified butter, adds a richer, more decadent flavor to dishes, and tortillas are no exceptions. If you'd like to substitute ghee for the fat in this recipe, you can use 1/4 cup (about 52g) and rub it into the dry ingredients as you would with butter or shortening.
