Hi Sandy, great question. The range of water included in this recipe gives you, the baker, some control over the final texture of the dough. If you're looking for something that's easy to handle and rollable in a pasta machine, start with slightly less than the lowest amount of water given in the range of the recipe (less than 7/8 cup, about 185g). You may need to add an additional 15g (a scant tablespoon) of water to bring the dough together, but you'll have a sense of how the dough is coming together as you knead.
