Hi Maureen, an 8" X 12" pan has a capacity of 96". I think you could get by with two 8" round pans at 50" capacity each, although the batter level is likely to be a little shallower in these pans, so baking time will be a bit faster. I was always taught to check early and often when switching pan sizes for the first time.
