Hi Riki! Using two 10 inch pans for a recipe that calls for three 9 inch pans may be ok...but it's really hard to give specifics not knowing which recipe is being made or the amount of batter it produces. Just keep in mind how much batter is going into the larger pans. Fill the pans no more than 2/3's full (you'll want to leave room for expansion). If you have any extra batter left over, you can make a few cupcakes on the side. Bake time may have to be adjusted due to the larger size...and generally bake temperature can remain the same (if it is being baked between 325-350 degrees).
