Gail, your recipe is suggesting a pan with a diameter of 9" which has an area of about 64". A 7" pan has an area of only about 38". An 11" pan has an area of 95". You can either reduce the recipe so it fits in your 7" pan or increase the recipe so it fits in your 9" pan. Because I would rather have more than less, I would increase your recipe by about 50% and use the 11" pan. This is best done using a scale. Multiply each ingredient by 1.5 to get the proper weight.
