Cindy, those are very good questions! Unfortunately, for your first question, we're going to have to give you the dreaded "it depends." Different cakes rise to different heights, so you'll really have to experiment with each cake recipe individually to find out whether it works well in a half sheet pan, and take good notes for future reference. For a roll cake designed to be made in a 10x15" pan, though, we can pretty safely say that there won't be enough batter to make in a half sheet pan. Kat@KAF
