It's possible, Kevin, but it may stick (the mix-ins in particular) and it may break because it's so heavy. Our Gluten-Free Carrot Cake recipe, however, is baked in a Bundt pan for 40 to 50 minutes at 350°F, so you're welcome to use that as a guide. You'll want the interior of this cake to reach 205°F to 210°F on a digital thermometer.
