I have been making this cake for years. I still use the catalog it was published, in from 1998. Whenever we have an event ,birthday or special occasion at work, I am requested to make it , and as everyone says, "it's legendary". By far the best carrot cake I have ever had. I even bought a bigger pan , since a 9x12 isn't big enough. it's always gone by the end of the day(most of the time, it's gone before lunch!) I have even had requests from people who claim to normally not like carrot cake, and it's the only thing people will cheat on their diets with, and I mean serious weight watchers who have not eaten sugar for months, will have a piece.
