If it was just an issue of a distinct freezer smell and taste and wasn't bitter I would suggest that you double check your freezer container and make sure that it is actually air tight or consider vacuum sealing the flour for longer storage. But in this case, Diane, you specifically say that it has a bitter taste and smell.
