Hi there, Alex! We haven't found that storing whole grains in the freezer changes the weight, as long as the flour is in an airtight container it shouldn't be absorbing excess moisture. When measuring in volume, we recommend fluffing the flour up in the container before gently sprinkling it into the measuring cup and leveling it off, as shown here. The differences you've seen in your own tests of measuring in volume are why we so highly recommend measuring by weight, as it leaves the least room for error.
