I keep all my flour except AP and Bread Flour in the freezer. I'm lucky enought to have an upright freezer in my basement, and right now two whole shelves of it are taken up with many varieties of King Arthur flours. Actually, there are quite a few things I keep in there besides flour -meringue powder, lemon juice powder, spice blends, Instant ClearJel, Cake Enhancer, Pie Filling Enhancer, and especially espresso powder. Since I started putting the espresso powder in the freezer, I have never had it turn to a solid rock, which had always been a problem. All of these things last WAY longer than they might otherwise.
