Biggest downside to keeping flours in the fridge or freezer (presuming one has the space): humidity. The humidity of the fridge and freezer can cause deterioration almost as quickly as shelf storage. (Of course, it's a different type of deterioration.) I've had nut flours which tasted "off" as soon as I got them, but that is pretty much par for the course with certain brands which are manufactured for specific communities...
