Darlene, thanks for that comment! Even flour that comes in "airtight" plastic bags should still ideally be transferred to another container of glass or hard plastic, because those bags are not pest-proof. Mice, moths, etc can eat through plastic bags quite easily, so those are not perfect storage containers even if they are resealable. And to clarify, your flour should never be years old when you buy it. Our expiration date is one year from the date it was first milled from wheat into flour, so you know exactly how long it has existed regardless of who is storing, shipping, or selling it. Always check that date and never accept expired flour from any retailer! We hope this helps reassure you that you'll never be getting old flour with our name on it. Kat@KAF
