Ok, so if the best way to keep the flours fresh is to place them in air-tight containers. And KA comes in paper bags,WHY???
We have no idea how long ago those bags were milled and many times, the companies milling them have no control over how long a store franchise will keep the flour in a warehouse.
Mind you, I have about 3 bags of KA wheat and white wheat in my house. But it seems to me that it should already come in an airtight container to preserve it before the customer gets it, because by then, it can be anywhere between 1-5 years old, depending on who buys it for their company and how long the it sits in a warehouse.
