Linda, we're committed to environmental responsibility and affordable pricing as well as ease of use, which means we need to be very careful about the materials and methods we use. Packaging research literally takes years to complete, but rest assured we're always looking for ways to innovate! That being said, all foods require proper storage, no matter what kind of packaging they come in, and without the addition of a ton of preservatives, no plastic bag will ever make whole wheat truly shelf stable over long periods of time.
