The dough bucket ... I have been there. First time user of bucket making no knead sourdough...wanted to make 4 loaves soooo....doubled the recipe in one bucket. It was, of course, very full after the three hour rise and fold on the counter but not having ever made no knead bread, I really had no idea how much more it would rise... Into the fridge and into bed...10 hours later I opened the fridge... Must compliment the strength of the large dough bucket from KAF. The top was bulging. The bottom was bowed out...but no dough escaped. Completely forgetting all laws of physics, I pulled the bucket out, placed it in the sink...and opened it. Loud pop noise...and a dough eruption. I managed to save 90% of Mt Vesuvius’ eruption and got 4 awesome loaves of bread.... Perhaps my starter, which had overflowed the container the night before making the bread should have been a warning....
