In fact, this weekend I tried to make churros. It is fried pate a choux. Simple enough, I've made pate a choux many times always successful. This time I tried a different recipe, chocolate pate a choux. And it said it can be kept in the refrigerator for two days before frying. Great, it's 7:00 pm I am ready to clean up the kitchen and relax. I put the dough in the fridge. The next day I tried to fry it and the outside burned and the inside was raw! Next time I try to make the churros I will use my tried and true recipe, and not put it in the fridge. Keep up your good works.
