When it comes to proofing I found that using an inverted plastic tray to cover the buns works pretty well. I got a Sterilite 28 Qt clear plastic storage tray (measures about 22 x 16", 6" deep). Turned it upside down with a cup of boiling water inside to steam it up while shaping the buns. Then use it to cover a half-sheet pan with the buns. While I own a Brod & Taylor proofer, it is too small for things made on the half-sheet pan.
