Thank you for this article. Today I made cream scones with King Arthur Spiced Eggnog Scone Mix (which normally calls for butter and milk) and they turned out great! I live at altitude so I ended up using the whole cup of heavy cream plus a little more to get the dough to the proper consistency for drop scones.
