Hi Sam, well, you'll definitely need to set up some sort of proofing box for your dough balls to rise. I assume you'll have heat/power available to cook the waffles, so this should be possible. Aim for a rising temperature of 75-78°F, and I would recommend thawing out the dough balls the night before in the refrigerator, so you don't have to start from frozen.
